Over all I'd say this video clipping was enjoyable for many different reasons, TODAH. :-)
One personal point of contention. The Sages sometimes paint our patriarchs in way that "they can do no wrong." Sometimes it can be easy to ignore the errors of the forefathers. However, the Scriptures make it clear that they weren't perfect people, nor were they expected to be. They were just (hopefully) people who actively (had Faith) pursued the God of Israel in their daily living.... & followed His instructions (Torah) overall at times.
It's noticeable how often some rabbinical sources comment so as to say that none of the Israelites of old committed actual sins, but would instead point accusing fingers in their commentaries/writings towards those who attached themselves to the God of Israel who weren't native Israelites.
However when the majority of the Tenakh is studied (or even just lightly perused for this particular matter), one would see HaShem condemn Israel's poor actions over & over - He would always pointedly speak to Israel about THEIR OWN behavior much more than He would speak to any supposed "attached rabble/rubble" among them.
It can be humorous to read how the "rebellious, pagan rabble" of non-Israelites were the cause of the community's sinful behavior or downfall at times. (This is not to say that we are not duly warned about the causes of assimilation) We see the opposite indicated though, typically. Consider this when reading about the "rav" large group of non-physical-Hebrews who came to Sinai with the redeemed Israelites. Read what the Text says itself about the problems that arose, and who was in reproach according to HaShem. You don't have to rely on much, much later rabbinical commentary for this event in order to see who He scolded or flatly punished & called to repentenance for their OWN behavior.
We need to be careful and balanced, or we will miss the clear message the Text is trying to give us ...

Ok, how does Jacobs hip being touched relate to that of an animal that can be slaughtered an eaten?

The source of the prohibition is from the struggle of Jacob with the Angel. The angel touched Jacob on the thigh and caused him to limp. Since then eating the particular factor that was touched is forbidden.
Genesis 32:
30 So Jacob called the name of the place Peniel: For I have seen God face to face, and my life is preserved. 31 Just as he crossed over Penuel the sun rose on him, and he limped on his hip. 32 Therefore to this day the children of Israel do not eat the muscle that shrank, which is on the hip socket, because He touched the socket of Jacob's hip in the muscle that shrank.
Your question brings up a whole Field of Study in Rabbinical Writings, i. e. Taami Ha-Mitsvot, Reasons for the Commandments.
We do not really know the reasons for all the Commandments. Nevertheless, by reading Scripture, comparing one thing to another, etc, we can often deepen our understanding of what the Bible requires of us, and what we may learn from it.
The Bible commandment concerning the Sciatic Nerve leads to it that every time we come to slaughter an animal and eat meat we will be reminded of the incident with Jacob.
Jacob was touched in the thigh. He won the struggle with the angel and received a blessing. Even so, the next day when the sun shone he was limping. The thigh is connected to the sexual organs. The Sages opined that what happened to Jacob comes to indicate that his descendants would be weakened, even when victorious, by sexual passion and its untoward results. The Sages also opined that every time the Israelites committed idolatry their conscious or subconscious motivation was sexual desire and the seeking of an excuse to enjoy illicit sex.

In the USA more than 50% are 55 years old or more. In Israel the figure is even higher.
Those who are younger may be more pulled to sexier subjects.
Even though we are not as young as we used to be the sexual drive is still a factor in the lives of all of us. It has both positive and negative effects.
The older we get the more control we have over it. At least that is how it should be.
